Open your eyes to the world of Summer Vinaigrette’s. I’m throwing oops. 
Pineapple Mango Vinaigrette #1
¼ cup pineapple juice (fresh is best, but canned will do in a pinch)
¼ cup green lemon olive oil (regular extra-virgin olive oil will work too, but it won’t have quite the same citrusy kick)
2 tbsp. red wine vinegar
1 tbsp. mango vinegar (if you can’t find this, just use more red wine vinegar)
½ tbsp. apple cider vinegar
1 tsp. brown sugar
a pinch of salt and pepper to taste
•Place all ingredients in blender and blend until smooth.
•You can also add a minced red bell pepper. This is what I did, but not needed. I did it for color. 

Pineapple Mango Vinaigrette #2
12 oz. mango (Frozen and chopped)
15 oz. pineapple (1 can and juice)
1 cup rice vinegar
¼ cup honey
2 tablespoon Dijon mustard
•Place all ingredients in blender and blend until smooth.
•You can also add a minced red bell pepper. This is what I did, but not needed. I did it for color. 

Peach Vinaigrette
1 medium yellow peach
3 Tbsp. extra virgin olive oil
3 Tbsp.red wine or sherry vinegar
½ tsp. salt
¼ tsp. cayenne pepper (optional)
•Peel and pit one peach. Cut into chunks and place in a blender with oil, vinegar, salt, and cayenne. Whirl until smooth.

Creamy Avocado Vinaigrette
1 ripe avocado
½ cup white wine vinegar
Juice of one lemon
Salt and pepper, to taste
¾ cup extra virgin olive oil
•In a food blender, combine avocado, vinegar, lemon juice, salt and pepper. Run processor until very smooth and creamy.
•With blender running on low, stream in olive oil through the shoot until just combined.

Strawberry Vinaigrette
1 package (16 ounces) frozen unsweetened strawberries, thawed
6 tablespoons lemon juice
1/4 cup sugar
2 tablespoons cider vinegar
2 tablespoons olive oil
1/8 teaspoon poppy seeds
•Place the strawberries in a blender; cover and process until pureed. Add lemon juice and sugar; cover and process until blended. While processing, gradually add vinegar and oil in a steady stream; process until thickened. Stir in poppy seeds. Transfer to a large bowl or jar; cover and store in the refrigerator.

It was a very humbling experience to serve as a Green Dot Training facilitator for the last couple of days. An amazing group. Green Dot is an international movement built on the premise that individuals can systematically and measurably reduce the levels of power-based personal violence found in their community. With the ultimate goal of preparing organizations/communities to implement a strategy of violence prevention that consistently, measurably reduces power-based personal violence (including sexual violence, domestic violence, dating violence, stalking, child abuse, elder abuse and bullying), Green Dot works toward two primary objectives. Content Development and Training.
